Because people prefer to see an actual email address, which in the short 
term is much more usable, and more widely understood. The long term 
problem we are working on here is important, but it shouldn't come at 
the cost of inconveniences for short/medium term usage. And most use of 
RFCs is short/medium term, in the sense that for a large percentage of 
actual usages, the email address in the RFC is still valid.
