I have some experience with this type of process and can see that the information you have provided is far from sufficient. The experts in this channel can certainly show you various techniques for updating and give you examples. However, to carry out such a project successfully, you will need much more detailed information about your company, your intentions, and your operating processes. I would consider it highly questionable to disclose this information about my company in a public list.
I recommend that you hire a consultant who specializes in Postgres, at least for the planning phase.
