I'm inclined to agree that it would be less than ideal to add first-class support for proprietary protocols to git send-email. Some kind of local SMTP => Graph API bridge is probably a better solution, assuming Microsoft won't listen to reason (nor your boss, when you ask them to switch away from Outlook).
