summary and description should be easy to fix

the subdir-in-bin is ... I think because you have an extra atuin here

install -Dpm 0755 target/rpm/atuin -t %{buildroot}%{_bindir}/atuin
                                                             ^ you use -D in
combination with -t, so all components are created including the extra atuin
