It took me a while to figure it out because there is NO unified documentation on how to create a compatibility package anymore (at least not that I could find).
I have requested a OIIO 2.5 compatibility repo:

Once released I will move olive and LuxCoreRender to this package and then proceed with moving the remaining packages to OIIO 3.0.
